The Gautheron estate is located in Fleys, a small village of 150 inhabitants, built on the side of a hill. The territory of the commune includes approximately 200 hectares of vines, therefore two premier crus: Mont de Milieu and Les Fourbeaux.

Since February 3, 2020, Domaine Gautheron has been certified HIGH ENVIRONMENTAL VALUE (HVE) Level 3.

Once harvested, the grapes are brought to the vat room where they are immediately pressed after being sorted to keep only the healthiest and ripest grapes.

2019

The vinification is traditional, it aims to best express the appellation and the terroir.
Then a soft pressing is carried out with pneumatic presses at low pressure allowing to select the best juices without trituration or oxidation.A static settling of 18 hours follows allowing the elimination of the coarsest particulars in order to keep only the fine lees.Then comes the alcoholic fermentation, which takes place in temperature-controlled vats at 16–18°C for 3 to 4 weeks. Each plot is vinified separately so that each terroir can express itself.Malolactic fermentation follows which stabilizes the wines by giving them a perfect balance.The wines are left on the fine lees for 3 to 8 months depending on the crus and the vintages.Racking takes place between February and May.To clarify the wines before bottling, cross-flow filtration takes place.Finally, the bottling will be carried out between 9 and 18 months depending on the cuvées and the appellations.
